The research report "Analysis of the main factors that influence the control of costs of the Buffet Table service of a four-star hotel in Havana City ”, aims to serve as a guide for making strategic of the installation in order to improve its control system costs and its profitability. Through the present descriptive and observational study, in which Theoretical and Conceptual Methods (historical-logical and synthesis and Insights), Empirical (observation and measurement) and Mathematicians (ABC quantitative technique and statistical package SPSS 15.0 for Windows), the following results were obtained: the main factors that affect the costs of the raw materials in the buffet service of this hotel are the cost price, the consumption and the performance of the products, the greatest incidents in costs of the goods for sale during the first quarter of 2009 were determined by Fruits, Dairy, Beef, Sausages and smoked meats. As for consumption, the Panes family was preferred. Finally, it was found that performance can alter the Prices of the goods and cause an unwanted economic effect.
