The present investigation was carried out with the objective of establishing the requirements to be taken into account for the classification by categories of the restaurants private in Havana. To comply with the established objective, an extensive bibliographic review was carried out on topics related to restoration and the classification of restaurants, specialists in the subject were interviewed, direct observation was carried out in the chosen places through an observation guide, and a classification method was developed that combines service, comfort and infrastructure characteristics with customer satisfaction.
10 palates from the Playa municipality were chosen as a sample, the requirements for the classification of the restaurants own account in three categories and a classification proposal was made for each of them.
