In today's world every day ideas are rethought in all sciences and in all areas, and the activity of Restoration is not exempt from this, since every day new culinary trends are developed, more advanced technologies are created, and They establish innovations in relation to the presentation of food and service alternatives that are offered as a consequence of customer demand, where supply is a fundamental line, hence the need for facilities dedicated to this activity to have a letter menu varied according to new restaurant trends that satisfy customers (Barnet, 1998).
The present work was carried out with the aim of: determining the behavior of the gastronomic offer of the Bar-Cafeteria ¨El Barbaran Pepito´s Bar, belonging to the Literary Artistic Corporation ARTEX SA
The results obtained showed that the offer of the installation does not generally satisfy customers, identifying the factors that cause this situation. Weaknesses and strengths were determined and, based on these, eleven actions were proposed aimed at improving the offer and guaranteeing a menu that makes it possible to meet customer expectations and increase the income of the Bar-Cafeteria ¨El Barbaran Pepito´s Bar
