Due to the increasing importance of forecasting and controlling costsIn order to maintain profitability, especially in the Mesa Buffet service, a study of the factors that affect the cost of groceries is carried out, in a four-star hotel, alimony, based on the families and products that have the highest incidence in the cost of goods, as well as consumption, using the ABC classification system. Fruit yields are analyzed, as this is the family with the highest incidence on consumption and one of the most influential on cost, and consumption rates and intervals for different groups of products are determined, with an important participation in the offer, using various parameters of descriptive statistics. Concluding that they are the consumption of the products, their performance, as well as their Prices of acquisition, the determining factors in the cost of food.
